Sweet and Sour Hawaiian Chicken


SWEET AND SOUR HAWAIIAN CHICKEN

1 lb chicken
1 tbs cornstarch
1 c. cold water
1/2 c. sugar
1/2 c. soy sauce
1/4 c. vinegar
1 clove garlic (minced)
1 tsp ginger
1/4 tsp pepper
1 green pepper diced
1 can chunk pineapple

Cut up chicken and brown. Mix other ingredients (except green pepper and pineapple). Bring to a slow boil. Reduce to simmer until thickened. Combine with chicken in an 8x8 pan and bake uncovered at 350 for 1 hour. During last 5 min. add the green pepper and pineapple. Serve over rice.

I got this recipe from my friend Annie when I got married. It is very yummy, and really easy to make! Her recipe calls for 1/2 a green pepper, but we like to put 1 1/2 in ours!

I agree with the green pepper...we add more than half, too.
