Haylee’s Note:
I knew looking at this recipe that it was going to be a good one, and it did not disappoint!  I had heard of this cookie salad before, but this was my first time having it!  I took it to a family party and it was a HIT!!  Everyone loved it!  I kept seeing all of the kids sneaking back for more and licking the bowl!  Thanks for the recipe Nikki!

My brother Rick, loving the salad!

Strawberry, Walnut, Spinach Salad

STRAWBERRY, WALNUT, and SPINACH SALAD

Spinach
Fresh Strawberries (sliced)
Candied Walnuts
Goat Cheese
Craisins
Balsamic Vinegarette

Toss all ingredients together!

Haylee's Note:
I got this recipe from my good friend Bridget's brother, Stuart. His recipe didn't include craisins but I threw them in...I also added a little swiss cheese! We had this for Easter and it was super easy but also super delicious!! There are lots of varriations you can do too (ie feta, swiss, poppyseed dressing, etc. etc.) I am finding now that Spinach salad is a fun one to play with.

Caprese Salad

CAPRESE SALAD

3 vine-ripe tomatoes, 1/4-inch thick slices
1 pound fresh mozzarella, 1/4-inch thick slices
20 to 30 leaves (about 1 bunch) fresh basil
Extra-virgin olive oil, for drizzling
Coarse salt and pepper

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste

Haylee’s Note:
This is such an easy salad, but it is soooo good!! This is really not a salad you need a recipe for, but I did take this recipe from Rachael Ray here. I love that you can present it is so many ways! I think it is such a pretty salad, and tastes as good as it looks. I also like mine with a little balsamic vinegar! Enjoy!

I love this salad because it is really easy to mix up, and you can change it up in so many ways. You can make this a main dish by adding the chicken or a side and without the chicken! Blue Cheese Dressing

BLUE CHEESE DRESSING

1 cold pack bleu cheese (broken up)
2 tbsp lemon juice
1/4 c. milk or sour cream
1 pt. mayonnaise

Heat milk. Add 1/4 of the cheese to the warm milk. Cool. Add the mayonnaise and the lemon. Add the remaining cheese. Serve over your favorite salad.

Haylee’s Note:

Non-Traditional Taco Salad

NON-TRADITIONAL TACO SALAD

1 head lettuce
2 c. grated cheese
2 c. Fritos
2 tomatoes
1 sm. Onion (rings)
½ c. sliced celery
1 green pepper sliced
1 can black or red beans (I like the red for this)
½ lb. cooked hamburger
1 avocado

Dressing- make in blender
1 can tomato soup
1/4 c. sugar
1/4 c. red wine vinegar
1/2 c. oil (opt)
1/2 tsp. paprika
1/2 tsp garlic powder
1/2 tsp onion salt
1/2 tsp dry mustard
1 tsp chili powder
pepper

Haylee’s Note:
If you are wanting the traditional taco salad, I suggest you go to Jadi’s version here. Although this is not traditional taco salad it is really good. You can serve these with or without the taco shells. Also, you can layer the salad with the different ingredients and put dressing on top, or you can just put them all together and mix it in one big bowl (that is the way I like it). Also as a suggestion, put the Fritos on last on top, because they will get soggy!

Jadi's Taco Bowls

JADI'S TACO BOWLS

I got this idea from my sister-in-law Jadi on her cooking website here. If you have never made your own taco salad bowls you should give it a try. It is so easy! All you have to do is spray a flour tortilla with cooking spray and lightly sprinkle with chili powder. Crumple up a ball of tin foil and drape the tortilla over the tin foil on a cookie sheet (With the sprayed side facing up). Bake @ 425 degrees for 6-10 minutes or until the bowl is crisp and holds its shape. That's it!
