Honey Ginger Chicken


HONEY GINGER CHICKEN

2 tbs. olive oil
1 tbs. honey
4 tsp. fresh, peeled, grated ginger
1 clove minced garlic
1/4 tsp fresh ground pepper
3 tbs. reduced sodium soy
2 large chicken breasts
1 large sweet potato, peeled and cut in chunks
1 med. onion cut into 8 wedges.

Mix oil, honey, ginger, garlic, pepper, and soy. Put in chicken (cut into chuncks), sweet potato, and onion. Let marinade in juices for 1 hour. Bake for 1 hour at 350, or until potatoes are soft, and chicken is cooked through.

I found a recipe similar to this in a magazine. I just made a few changes. This is a really easy meal, and really healthy too!
