Potato Soup
POTATO SOUP
6 medium diced potatoes
1 tsp. parsley
1/2 tsp. salt
2 1/2 c. milk
1/4 c. butter
1/2 tsp. garlic salt
pinch pepper
1 c. water
Cook potatoes in butter, water, parsey and seasonings until potatoes are tender. Mash slightly. Add milk and sprinkle with cheese.
Haylee's Note:
I love this soup on cold winter days, especially with warm homemade wheat bread! Another thing I love about this soup, is you can play with it!! You can make it healthier by using skim milk, no butter, and just a little cheese. Or, you can make it terrible for you, but super delicious, by using cream, butter, and lots of cheese. I usually make mine the first way, and Darin's the 2nd. (Kind of Jack Sprat--reversed)
