Twice Baked Potatoes
TWICE BAKED POTATOES
10 large baked potatoes
2 c sour cream
4 green onions
2 tsp. pepper
6 oz. cream cheese
1 c. butter
2 tsp. salt
1 1/2 c. grated cheddar cheese
Bake the potatoes, and cut off the very top (going the long way). Scoop out the insides. Mix the insides of the potatoes with the remaining ingredients. Return mixture to the shell. Cook in the oven at 350 for 10-15 minutes, or until the mixture is warm and cheese is melted.
Haylee's Note:
This recipe was given to my mother by her friend Becky Gray. Our family loves these, but we don't eat them too often because they aren't too healthy. But they sure are good! We also call these "potatoes in a half shell" or mom just calls them "Becky Gray's Potatoes." I called it twice baked, because that is how most people know them.
