Clafoutis


CLAFOUTIS

4 eggs
2 cups milk or rice milk
1/3 cup flour
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon almond extract or vanilla extract
1/2 cup fresh or frozen fruit of your choice (cherries, blueberries, raspberries, peaches)

Place eggs, milk, flour, sugar, salt, and extract in a blender. Blend on low speed for about 30 seconds. Pour into a quiche dish or ovenproof glass dish. Put fruit on top. Cook at 350°F (177°C) for 45 minutes or until clafoutis is not very jiggly.

I got this recipe from my cute cousin Katie! She has a cute model eating it too! We LOVED this breakfast, and so did Matthew! I honestly think he could have eaten the whole pan by himself! Katie got this recipe from the friend. You can get the original recipe here. Clafoutis is pronounced kla-FOO-tee. In France people eat it for dessert, but it’s also delicious for breakfast. You can make it with your favorite fruit, and it’s good either warm or cold. We made ours with cherries and almond extract!! AMAZING!! I want to try it tomorrow with plums!
