Spinach Chicken Alfredo


2 chicken breasts
1/4 c. butter
1/4 c. + milk
1/4 c. flour
1 c. spinach cooked
2 cloves garlic
1/4 c. parmesan cheese
1/4 c. mozzarella cheese

Cook chicken and cut into 1” pieces. Mix butter, milk, and flour to make a roux. Puree spinach and garlic and add to roux. Add remaining ingredients and add more milk to desired thickness. Serve warm over linguini noodles. Sprinkle with more parmesan cheese.

Haylee’s Note:
I had some chicken and spinach that I needed to use before it went bad, and this is what I came up with. We both liked it a lot.
