1 package curry roux (you can buy this at any Asian Market)
1 yellow crookneck squash
Wash and cut veggies into bite sized pieces. Boil vegetables until tender. Add curry to desired thickness. Serve warm over rice.
I am going to have to check with Darin if this is how he makes it, but I sure love when he does!!! It is soo good!! He said that he used to make a big pot of this when he was on his mission in Japan and they would just eat that every day. Darin always makes different variations of this. We love diakons, beets, and even apple. Darin also likes to add different meats, mainly chicken.
