Manicotti


MANICOTTI

8 cooked manicotti shells
2 c. shredded mozzarella cheese
1 container ricotta or cottage cheese
1/4 c. Parmesan cheese
2 eggs
1/2 tbs. parsley
1/2 tbs. oregano
1/2 tsp. salt
1/4 tsp. pepper
1 jar spaghetti sauce

Cook manicotti according to directions. Cool on foil. Combine remaining ingredients (except spaghetti sauce). Spoon mixture into shells. Spread a layer of sauce on the bottom of a 9x13 pan. Place stuffed manicotti on sauce. Pour remaining sauce over manicotti. Sprinkle parmesan cheese over sauce. Bake at 350 for 35 minutes.

Haylee’s Note:
This is the first time I made Manicotti! This was my variation of the recipe, and it turned out pretty good! It was fast and really easy! I didn't have enought mozzarella, so I used cheddar (hence the orange color) I would like to make this again, and try a few things a little differently—like make my own sauce for the top. But, I will definitely be making this one again!
