Meatball Sandwiches



MEATBALL SANDWICHES

Meatball mix:
1 lb hamburger
1/2 lb. sausage
1 egg
1/4 c. water
1 clove minced garlic
¼ c parmesan cheese
1 c. bread crumbs
2 tbsp basil
1 tbsp parsley
Salt and pepper

Mix mixture and roll into walnut sized balls. (I do about 1 tbsp). Fry.

Sauce:
1 lb. hamburger
1 diced onion
1 minced clove garlic
1 can tomato paste
1 can tomato juice
1 tsp basil

Mix sauce and meatballs. Serve on a toasted bun with melted mozzerella cheese.

Haylee's Note:
These are so yummy! I actually use the same meatball recipe that I use for spaghetti. Enjoy!

Bean Salad Wraps




BEAN SALAD WRAPS

4 8 inch tortillas (flour or flavored)
1 can black beans (rinsed and drained)
1/2 c. green sweet peppers
2 tbsp. snipped fresh cilantro
1/3 c. miracle whip
1 tbsp. lime juice
Lettuce

Stack tortilla and wrap tightly in foil. Heat in a 350 oven for 10 min. to soften. Meanwhile, in a medium bowl mash black beans slightly; add pepper and cilantro. Stir in miracle whip and lime juice. Spread bean mixture evenly over tortillas. Top with lettuce leaves roll up tortillas.

Haylee’s Note:
These may seem bland, but they are so yummy!! It is such a good meal during these hot summer days! I also added a little tomato to my wrap. You could add lots of things to yours, but it really doesn’t need anything else! Enjoy!! (this is another recipe from Better Homes and Gardens)

Classic BLT (Bacon Lettuce Tomato)



CLASSIC BLT (BACON LETTUCE TOMATO)
Two slices of bread
3 slices of bacon
Lettuce
Sliced Tomato
Mayonnaise
Salt
Pepper

Toast bread. Cook bacon until desired crispness. Spread Mayonnaise on both pieces of bread. Layer tomato, lettuce, and bacon.

Haylee’s Note:
I know that you don’t really need a recipe for a BLT, but I usually go to the blog when I can’t think of what to eat, so here is just another idea for some food. Darin and I also like to make BLTCs—just add a little Monterrey Jack cheese with it. I find the best layering method is toast, mayo, cheese, tomato, salt and pepper, lettuce, bacon, mayo, toast. And, a sandwich cut in half always tastes better doesn’t it?

Cinnamon Apple Cheese Panini




CINNAMON APPLE CHEESE PANINI

Cinnaburst Bread (from Great Harvest)
Sharp Cheddar Cheese
Apple, thinly sliced (I like a sour green apple)
Butter

Butter the outsides of the bread. Layer cheese, apple, then cheese again. Grill. Serve warm.

Yes, I am on a Panini kick! Mmmm…I love warm sandwiches! Sooo good! I think that there are a lot of yummy cheeses you could try with this one! Enjoy!

Ham, Monterey Jack, and Raspberry Panini



HAM , MONTEREY JACK, AND RASPBERRY PANINI
Bread of your choice
Grey Poupon
Ham
Monterey Jack Cheese
Raspberry preserves
butter

Spread Grey Poupon on both side of bread. Layer ham, the raspberry preserves, then cheese, then ham on bread. Spread outsides of bread with butter. Grill until cheese melts.

Haylee’s Note:
Like I said in the last post, KSL Studio 5 “inspired” me to make my own version of a Panini!! It was so good that I made more for lunch today! We really liked them both, but I might like this one even better! Get creative and make your own Panini’s! Enjoy!

Beef and Gorgonzola Panini



BEEF AND GORGONZOLA PANINI

Focaccia bread (or other rustic bread)
Thinly sliced Roast beef
1 large onion, sautéed until crispy and caramelized.
Slices of Gorgonzola cheese
Horse Radish spread.
Mayonnaise

Layer ingredients on the Focaccia, butter tops and grill until cheese starts to melt.

Haylee’s Note:
I saw this recipe on Studio 5 when they had Susan Neal on the show. Their theme this month is “Be Inspired.” This show did inspire me, and I gave this recipe a try, loved it, and we tried an original Panini which we also loved!! Matthew always seems to get hungry when Studio 5 comes on so I watch it nearly every day while I feed him! Thanks Studio 5 for the great idea! For the original recipe click here

Barbecue Beef Sandwich



BARBECUE BEEF SANDWICHES


1/2 c. ketchup
4 tbsp. water
3 tbsp. butter
3 tbsp brown sugar
1 tsp. salt
1 tbsp. chili powder
1 tbsp. mustard
2 tbsp. Worcestershire
1 tsp. paprika
1/4 tsp. pepper

Mix all ingredients together and mix with shredded beef. Serve warm on rolls or bread.

Haylee’s Note:
You can also just use the shredded beef and mix it with bbq sauce you buy at the store, but I think it is always good to have a back up recipe in case you don’t have any bbq sauce on hand. This is always a good meal to have after making a “Sunday Roast” and using the left-overs. This would also be a really good crock-pot meal, and also really good with shredded pork.

St. Patrick’s Day Sandwich


ST PATRICK’S DAY SANDWHICH

You can use any type of sandwich you want (egg salad, chicken salad, tuna fish, etc) and just add green food coloring. Then, just use a paintbrush, food coloring, and milk to paint a shamrock.

Tomato Cheese Sandwich


TOMATO CHEESE SANDWICH

Bread
Cheese
Tomato
Garlic Salt
Pepper

Toast one side of bread in the oven (set on broil). Turn bread over and top with cheese. Put back in the oven until cheese melts. Top with tomato slices and sprinkle with garlic salt and pepper.

Haylee’s Note:
This is a really simple meal, not even a recipe really. But, I really like this sandwich. I used to have it all the time growing up, and Darin really likes “cheese on toast” (pretty much the exact same thing w/o tomato and regular salt instead of garlic salt). If you haven’t done this before give it a whirl!

Cheese

Layer eggs, cheese, and sausage between two halves of the biscuit. Serve warm.

Sloppy Joes


SLOPPY JOES

4 lb hamburger
1/2 c celery
3 tbsp. mustard
1/3 c. Worcestershire
Salt
Brown sugar
1 green pepper
3 small onions
2 cans tomato soup
1/2 tsp chili powder
Tomato juice

Brown hamburger. Add onions, pepper and celery. Add remaining ingredients and simmer. Serve warm on hamburger buns. Make 25 sloppy Joes.

Haylee’s Note:
I used to HATE sloppy Joes. But I had this recipe when I was at girls’ camp and my friend Lara Taylor (now Johnson) taught me to load it with chips! Ever since I have loved sloppy Joes! I love that they are so easy to make—especially when you are cooking for a large group!

Mama’s Meatballs


MAMA’S MEATBALLS

Meatball mix:
1 lb hamburger
1/2 lb. sausage
1 egg
1/4 c. water

Simmer then add cooked meatballs.

Haylee’s Note:
These meatballs are really good as sandwiches (just put on a toasted bun and top with a slice of mozzarella cheese) or over spaghetti sprinkled with parmesan.

Egg Salad Sandwich


EGG SALAD SANDWICH
Hard Boiled Egg (diced into cubes)
Mayonnaise
Mustard
Salt and Pepper
Lettuce
Bread

Mix first four ingredients together. Spread on bread. Top with lettuce

Yes, this is very simple, and everyone pretty much knows how to do it, but I usually use the recipe blogs for the idea of what to make, not the actual recipe. Enjoy!

PMA Grilled Cheese Sandwhich (Pretty Much Amazing)


PMA GRILLED CHEESE SANDWICH (PRETTY MUCH AMAZING)

2 slices white bread (Grandma's is the best)
2 slices sharp cheddar cheese (I like Tillamook)
1 tbs. butter
2 tbs. Catalina dressing

Spread butter on outside pieces of bread. Spread Catalina dressing on insides of bread. Place cheese between slices. Grill on med. heat in a skillet. Serve with tomato soup.

Haylee's Note:
These cheese sandwiches are THE BEST!!! My sister-in-law Janie told me about them one day, and I had Darin's mom make me one! They are unreal! The Catalina dressing makes all the difference in the world. When I asked Darin's mom where she got the idea, she told me that Darin's father's mother made them for him! So, they have been around for a while, but they are delicious!!

Two Tuna Sandwiches


HAYLEE'S TUNA

1 can tuna
2 T miracle whip
1 stock chopped celery

mix together, spread on bread, and top with lettuce

DARIN'S TUNA

1 can tuna
1/4 c miracle whip
sliced dill pickles
sliced tomato

Mix tuna and miracle whip. Spread mixture on bread. Place sliced dill pickles and sliced tomatoes on top. Last put on lettuce.

Haylee's Note:
It is amazing to me how different everyone's version of a simple tuna sandwich can be. These are ours.

Ribbon Sandwiches


RIBBON SANDWICHES

Dyed sandwich bread (sliced long way)
Tomatoes
Thinly sliced ham
Cream cheese
Cheese, Olive, and Pimento Spread

Spread cream cheese on one side of the bread and the cheese, olive, and pimento spread on the other slice of bread. Put the ham and tomatoes on the sandwhich, cut, and enjoy!

Haylee's note:
These are good with the ham, but we have also made them vegitarian without (like we did in this picture green have ham pink are without).

Cucumber Sandwiches Canapes


CUCUMBER SANDWICHES CANAPES

1 loaf Hollywood bread
8 ounces cream cheese, softened
1 long English cucumber or 2 cucumbers, scored down the sides and sliced into ½ inch rounds
Dill Dip (See below)

Trim crusts from bread and spread slices with softened cream cheese. Cut each slice into four square pieces. Top with a cucumber slice. Add dollop of Dill Dip.

Dill Dip
1 cup sour cream
1 cup mayonnaise
4 T finely chopped green onions
2 T dried dill weed
½ t salt
2 t Worcestershire sauce
Dash of pepper
Firm squeeze of lemon

Combine all ingredients. Chill for flavors to blend.

Haylee's Note:
These Sandwiches are delicious!! When mom and I made these for the granddaughters teaparty--they were by far the favorite! You can either cute them small for an appetizer, or keep them big for a yummy lunch! (We like to do them in shapes either with cookie cutters or with a knife) Mmmm....I think I could go for some right now!!
