2 tbsp yeast
1 1/2 c. warm water
2 tbsp sugar

1/4 c. oil
4 c. flour
2 tsp salt

Knead 10 minutes. Cover in oiled bowl until double (1 ½ hours). Punch down. Roll into circles. Fill with:

10 oz. thawed spinach drained
3 c. grated mozzarella
1/3 c. parmesan
2 c. ricotta

Fold over and seal with a fork. Brush with a beaten egg. Put on a cookie sheet that has been dusted with cornmeal. Bake at 350 for 20 minutes or until brown.

I got this recipe from my sister Heather’s mother-in-law. She is also an excellent cook. We like to serve this with warm marinara sauce. Enjoy!!
