Rumbi Inspired Dinner


1 can black beans (drained)
1 can corn (drained)
1 chicken breast (cooked and shredded)
3 tomatoes diced
1 diced onion
1 tbsp. lime juice
1/2 green pepper diced
Papaya diced
1/4 c. cilantro
1 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. garlic salt
1 tsp. red pepper flakes

Mix all ingredients together in a skillet over medium heat except for cilantro and papaya. Mix until warm. Add papaya and cilantro at the very end. Serve over rice.

Haylee’s Note:
This isn’t anything too fancy. This is just what I had in the fridge and just mixed it together, but we both thought it tasted pretty good. You can try different variations on this. I think this would also be really good with mango instead of papaya. Enjoy!
