Ebelskivers
EBELSKIVERS
4 eggs, separated
1 tablespoon sugar
2 cups flour
1 tsp salt
1 tsp baking powder
1/4 c melted shortening
Scant 2 cups milk
Beat egg yolks; beat in sugar. Combine dry ingredients. Add alternately with shortening and milk. Beat egg whites until stiff, but not dry. Fold into batter. Grease and ebelskiver pan. Heat until smoking. Fill depressions about half full. When cooked on bottom, turn with two forks. Cook other side. Regrease pan between batches.

My sister’s in-law’s make these for Christmas every year. I am not sure what recipe they use, but this one is really good too! I LOVE ANYTHING that resembles pancakes or a breakfast food! Enjoy! For the original recipe click here
